- Conduct a bibliographic study on archaeomicrobiological methods for dating samples and estimating the age of microorganisms.
- Sample the floors, walls, and ceilings of the cellar to compare different sampling methods.
- Revive yeasts and bacteria present in samples and preserve them for future studies.
- Isolate microorganisms of oenological interest.
- Study the fermentation kinetics of revived strains on synthetic must.
- Analyze the organoleptic profile of revived strains on must.
- Prepare microorganism samples for high-throughput sequencing analysis to characterize populations present in samples.
- Bachelor's or Master's degree in Microbiology or Bioprocess Engineering.
- Knowledge of basic microbiological techniques.

- Autonomy.
No prior experience required, though familiarity with microbiological techniques is advantageous.
