- Manage daily operations within the sommellerie service.
- Advise on wine and spirit sales and ensure optimal guest satisfaction throughout the service.
- Handle billing and payment processes in coordination with the hierarchical superior.
- Promote the hotel's dining venues and events, as well as those across Cheval Blanc properties.
- Ensure operational setup, control, and restocking of the wine cellar.
- Manage inventory and collaborate with the purchasing department.
- Welcome and advise guests to enhance their experience and increase sales.
- Take and transmit orders, and serve beverages and potentially dishes as per hotel procedures.
- Assist in clearing and resetting tables.
- Present bills and process payments following hotel protocols.
- Promote various services and products within the hotel and Cheval Blanc properties.
- Perform cleaning tasks according to hotel procedures.
- Supervise assigned staff.
- Manage linen setup, renewal, and supply.
- Facilitate internal communication and information flow within the service.
- Ensure compliance with hygiene, safety, and alcohol and tobacco regulations.
- Report any abnormal situations concerning client or colleague safety to superiors.
- Formal training in sommellerie, such as Bac Pro Service et Commercialisation, Bac STHR, BP Sommellerie, MC Sommellerie, or WSET Level 4.
- Knowledge of HACCP hygiene standards.
- Understanding of beverage service legislation.
- Familiarity with luxury hospitality or Michelin-starred dining environments.
- Strong grasp of gastronomy and the world of sommellerie and oenology.
- Excellent interpersonal skills and strong representational potential.
- Exceptional customer service and hospitality skills, with courtesy and tact.
- Empathy and the ability to anticipate and propose solutions.
- Meticulousness, precision, organization, and attention to detail.
- Availability, flexibility, and adaptability.

- Proven sales and communication skills.
- Proficiency in Microsoft Office and Micros.
- Fluent in English (written and spoken).
- Proficiency in a third language is advantageous (Arabic, Russian, Chinese, Portuguese).
A minimum of 3 years of significant experience in sommellerie within a similar high-end establishment is required.
Formal training in sommellerie or related fields.
