- Manage the sanitary quality of pastry and chocolate production.
- Conduct audits on hygiene practices at production sites and propose corrective actions.
- Monitor self-inspections of production processes.
- Ensure traceability of productions in collaboration with operational teams.
- Oversee the annual control plan for productions, including collaboration with external laboratories, synthesis of results, analysis, and correction of non-conformities.
- Monitor the quality of food and packaging suppliers.
- Manage the export of chocolate products, ensuring regulatory compliance of labels and packing lists, and address customer inquiries and complaints.
- Validate recipes and product shelf life in collaboration with the Pastry Chef.
- Regularly update quality system documents.
- Analyze non-conformities and complaints and implement improvement actions.
- Participate in the implementation, monitoring, and updating of service procedures and standards in collaboration with the Pastry Chef.
- Develop and communicate performance dashboards.
- Contribute to the development and animation of a Quality action plan.
- Report any abnormal situations regarding safety or accident risks to management.
- Higher education in Hospitality/Catering (e.g., BTS)
- Knowledge of HACCP hygiene regulations
- Experience in luxury hospitality or starred restaurants
- Excellent interpersonal skills and strong representational potential
- Exceptional customer service and hospitality skills, with courtesy and tact
- Empathy, anticipation, and proactive problem-solving abilities
