Cheval Blanc Pastry Chef de Partie

- Oversee the preparation of assigned menu components in accordance with technical sheets developed by the Executive Pastry Chef.
- Organize and supervise the work of team members, ensuring compliance with hygiene standards.
- Ensure the quality and freshness of ingredients through meticulous inspection upon receipt, adhering to HACCP protocols.
- Manage the storage and preservation of food items following hotel hygiene standards and procedures.
- Prepare and verify menu components, ensuring adherence to the Chef's instructions and hotel procedures.
- Strive to deliver high-quality pastries with an aesthetic that enhances the venue's reputation while optimizing costs.
- Maintain cleanliness, safety, and hygiene in the assigned area, adhering to HACCP standards.
- Ensure proper use, maintenance, and respect for all equipment in the assigned area, following HACCP standards.
- Participate in daily stock management, including FIFO, inventory, and ordering.
- Coordinate team activities to ensure service quality and efficiency.
- Welcome and train new team members.
- Supervise and support commis and demi chefs de partie.
- Report any abnormal situations concerning safety or potential accidents to superiors.
- BEP/CAP in Pastry or BAC PRO in Cuisine / MC Pastry
- Mastery of HACCP hygiene standards
- Familiarity with luxury hospitality or Michelin-starred restaurant environments
- Organizational and operational management skills (training, leading, supervising)

At least 3 years of experience, including 2 years as a Demi Chef de Partie in pastry within a luxury hotel or Michelin-starred restaurant.
BEP/CAP in Pastry or BAC PRO in Cuisine / MC Pastry
