- Oversee the preparation and presentation of menu components, ensuring adherence to technical specifications provided by the Head Chef.
- Organize and manage the kitchen staff under one's charge, maintaining strict hygiene standards.
- Ensure the quality and freshness of ingredients, practicing effective management of perishable goods.
- Maintain cleanliness, safety, and hygiene in the designated kitchen area, complying with HACCP standards.
- Manage the storage and preservation of food items.
- Participate in daily stock management, including FIFO, inventory, and ordering processes.
- Coordinate team efforts to ensure seamless service quality.
- Welcome and train new team members.
- Supervise and support commis and demi-chefs de partie.
- Report any safety concerns or potential hazards to management.
- BEP/CAP in Culinary Arts or BAC PRO in Culinary Arts
- Mastery of HACCP hygiene standards
- Familiarity with luxury hotel or Michelin-starred restaurant environments
