1. Understand the synthesis mechanisms of varietal thiol aroma precursors in the pre-fermentation phase.
2. Study oenological practices to protect primary aromas during fermentation and post-fermentation.
3. Conduct trials related to aroma precursor synthesis and protection.
4. Monitor and manage grape maturity.
5. Develop and oversee operational trials during harvest and vinification.
6. Perform bibliographic research to propose new insights.

1. Education in viticulture and oenology or DNO.
2. Interest in fieldwork.
3. Attention to detail, responsiveness, and reliability.
4. Proactive with a critical mindset.
5. Good interpersonal skills.
6. Driver's license preferred.
