- Oversee daily operations within the sommellerie service.
- Advise guests on wine and spirit selections to enhance their dining experience.
- Ensure optimal guest satisfaction throughout the service.
- Handle billing and payment processes in collaboration with the supervisory team.
- Promote the restaurant's offerings and events, as well as those of other Cheval Blanc properties.
- Manage the operational setup, inventory, and stock control of the wine cellar.
- Welcome and assist guests in the restaurant.
- Participate in order taking, service, and table setting procedures.
- Promote and sell the restaurant's services and products.
- Supervise and guide junior staff members.
- Ensure compliance with hygiene and safety regulations.
- Report any safety concerns or unusual situations to management.
- Formal training in sommellerie, such as Bac Pro Service et Commercialisation, Bac STHR, BP Sommellerie, MC Sommellerie, or WSET Level 4.
- Knowledge of HACCP hygiene standards.
- Familiarity with beverage service legislation.
- Experience in luxury hospitality or fine dining establishments.
- Exceptional interpersonal and communication skills.
- Strong customer service orientation with courtesy and tact.
- Empathy and proactive problem-solving abilities.
- Attention to detail and organizational skills.
- Flexibility and adaptability.

- Fluency in English; additional languages such as Arabic, Russian, Chinese, or Portuguese are advantageous.
- Proficiency in Microsoft Office and Micros systems.
A minimum of 3 years of significant experience in a similar role within a luxury establishment is required.
Formal training in sommellerie is required.
