Cheval Blanc Assistant Sommelier

- Ensure operational setup, control, and manage wine cellar operations.
- Oversee the management of the wine cellar, including stock monitoring and inventory in collaboration with the Purchasing Department.
- Welcome guests at the point of sale and provide expert advice to ensure guest satisfaction and optimize sales.
- Participate in order taking, transmission, and service of beverages according to hotel procedures.
- Assist with table clearing and resetting operations.
- Present invoices and handle payments in accordance with hotel procedures.
- Promote various services and products available within the hotel and Cheval Blanc properties.
- Perform cleaning tasks as per hotel procedures.
- Manage linen setup, renewal, and supply.
- Report any 'abnormal' situations concerning client or colleague safety or accident risks to the hierarchy.
- Diploma in Sommellerie such as Bac Pro Service et Commercialisation, Bac STHR, BP Sommellerie, MC Sommellerie, or WSET Level 4.
- Knowledge of HACCP hygiene standards.
- Understanding of beverage service legislation.
- Familiarity with luxury hospitality or starred restaurant environments.
- Strong knowledge of gastronomy and the world of sommellerie and oenology.
- Excellent interpersonal skills and strong representational potential.
- Outstanding customer service skills with courtesy and tact.
- Empathy, anticipation, and proactive problem-solving abilities.
- Meticulous attention to detail, organization, and precision.
- Flexibility, adaptability, and team spirit.
- Desire to progress in the hospitality and restaurant industry.
- Significant experience in sommellerie in an establishment of similar standing.
- Sales and communication skills.
- Proficiency in Microsoft Office and Micros.
- Fluent in English (written and spoken); proficiency in a third language (Italian, Japanese, Russian) is appreciated.
Minimum of 3 years of significant experience in sommellerie within a similar high-standard establishment.
Diploma in Sommellerie or equivalent qualifications.
