- Oversee the preparation of specific menu components in accordance with technical sheets provided by the Executive Pastry Chef.
- Organize and manage the work of assigned personnel, ensuring compliance with hygiene standards.
- Ensure the quality and freshness of products received, adhering to HACCP protocols.
- Manage storage and preservation of food items following hotel procedures.
- Prepare and verify menu components, ensuring adherence to the Chef's instructions and hotel procedures.
- Strive to deliver high-quality pastries that enhance the brand's reputation while optimizing costs.
- Maintain cleanliness, safety, and hygiene in the assigned area, following HACCP standards.
- Ensure proper use, maintenance, and respect for all equipment in the assigned area.
- Participate in daily stock management, including FIFO, inventory, and ordering.
- Coordinate team efforts to ensure quality and efficient service.
- Welcome and train new team members.
- Supervise and support commis and demi chefs de partie.
- Report any abnormal situations regarding safety or potential accidents to superiors.
- BEP/CAP in Pastry or BAC PRO in Cuisine / MC Pastry
- Mastery of HACCP hygiene standards
- Experience in luxury hospitality or Michelin-starred restaurants

A minimum of 3 years of experience, including 2 years as a Demi Chef de Partie in a luxury hotel or Michelin-starred restaurant.
BEP/CAP in Pastry or BAC PRO in Cuisine / MC Pastry
