- Oversee daily operations within the sommelier service department.
- Advise and guide guests on wine and spirits selections to ensure optimal satisfaction.
- Manage billing and payment processes in collaboration with the supervisory team.
- Promote the hotel's dining venues and events.
- Support the Assistant Director of Sommellerie in various tasks.
- Ensure operational setup and manage wine cellar inventory.
- Welcome guests and ensure their satisfaction throughout the service.
- Participate in order taking, service delivery, and table setting according to hotel procedures.
- Promote hotel services and products.
- Supervise and train staff within the sommelier and dining teams.
- Maintain hygiene and safety standards, adhering to alcohol and tobacco regulations.
- Report any safety or accident risks to management.
- Conduct daily updates of guest preferences and profiles.
- Manage inventory and monitor stock levels and losses.
- Organize staff schedules to ensure adequate coverage.
- Place regular orders with suppliers for targeted wine selections.
- Ensure accurate and up-to-date sales materials are available.
- Establish pricing strategies for specific wine selections.
- Maintain accurate billing through Micros system.
- Implement effective wine rotation strategies.
- Propose and implement operational improvements.
- Formal education in sommellerie such as Bac Pro Service and Commercialization, Bac STHR, BP Sommellerie, MC Sommellerie, or WSET Level 4.
- Understanding of HACCP hygiene standards.
- Knowledge of beverage service legislation.
- Experience in luxury hospitality or Michelin-starred restaurants.
- Strong grasp of gastronomy and oenology.
- Exceptional interpersonal and representational skills.
- Strong customer service orientation with courtesy and tact.
- Empathy and proactive problem-solving abilities.

A minimum of 5 years of significant experience in sommelier roles within establishments of similar standing is required.
Formal education in sommellerie or related fields is required.
