- Oversee the preparation of menu components, ensuring adherence to technical specifications provided by the Head Chef.
- Organize and manage the kitchen staff within the assigned section, maintaining hygiene standards.
- Ensure the quality and freshness of ingredients and manage perishable goods efficiently.
- Maintain cleanliness, safety, and hygiene in accordance with HACCP standards.
- Coordinate daily stock management, including FIFO, inventory, and ordering.
- Train and supervise junior kitchen staff, including commis and demi-chefs de partie.
- Report any safety or accident risks to management.
- BEP/CAP in Cuisine or BAC PRO in Cuisine
- Proficiency in HACCP hygiene standards
- Experience in luxury hospitality or Michelin-starred restaurants
