- Manage daily operations within the sommelier service.
- Advise on and facilitate the sale of wines and spirits, ensuring optimal guest satisfaction throughout service.
- Handle billing and payment processes in coordination with the superior.
- Oversee operational setup, cellar management, stock tracking, and inventory in collaboration with the Purchasing/Economat department.
- Welcome guests and provide expert advice to enhance their dining experience and maximize revenue.
- Participate in order taking, transmission, and service of beverages and potentially dishes, adhering to hotel procedures.
- Assist in clearing and resetting tables.
- Present bills and process payments as per hotel protocols.
- Promote various services and products available within the hotel and Cheval Blanc properties.
- Perform cleaning tasks according to hotel procedures.
- Manage linen setup, renewal, and supply.
- Report any unusual situations regarding guest safety or potential accidents to the management.
- Formal education in sommellerie such as Bac Pro Service et Commercialisation, Bac STHR, BP Sommellerie, MC Sommellerie, or WSET Level 4.
- Knowledge of HACCP hygiene standards.
- Familiarity with beverage service legislation.
- Experience in luxury hospitality or starred restaurants.
- Exceptional interpersonal skills and strong representational potential.
- Outstanding customer service and hospitality acumen, with courtesy and tact.
- Empathy with the ability to anticipate needs and offer solutions.
- Meticulous attention to detail, precision, and organizational skills.
- Flexibility, adaptability, and team spirit.
- Desire to advance in hospitality and culinary arts.
- Proficiency in sales and communication.
- Fluency in English, both written and spoken; proficiency in a third language such as Italian, Japanese, or Russian is advantageous.
- Competence in Microsoft Office Suite and Micros.
A minimum of 3 years of significant experience in sommellerie within a comparable establishment is required.
Formal education in sommellerie such as Bac Pro Service et Commercialisation, Bac STHR, BP Sommellerie, MC Sommellerie, or WSET Level 4.
