- Manage daily operations within the sommellerie department.
- Provide expert advice on wine and spirits to enhance sales and ensure guest satisfaction.
- Oversee billing and payment procedures in coordination with the supervisor.
- Ensure operational setup, control, and manage wine cellar operations, including stock management and inventory in collaboration with the purchasing department.
- Welcome and advise guests to ensure complete satisfaction and contribute to revenue optimization.
- Participate in order taking, transmission, and service of beverages and possibly food, adhering to hotel procedures.
- Assist in clearing and resetting tables.
- Present and process payments according to hotel procedures.
- Promote various services and products available within the hotel and Cheval Blanc properties.
- Perform cleaning tasks as per hotel procedures.
- Manage linen setup, renewal, and supply.
- Report any unusual situations concerning safety or client and colleague accident risks to the hierarchy.
- Formal training in sommellerie such as Bac Pro Service et Commercialisation, Bac STHR, BP Sommellerie, MC Sommellerie, or WSET Level 4.
- Knowledge of HACCP hygiene standards.
- Understanding of beverage service legislation.
- Familiarity with luxury hospitality or starred restaurant environments.
- Strong gastronomic and oenological knowledge.
- Excellent interpersonal skills and strong representational potential.
- Exceptional customer service and hospitality skills, with courtesy and tact.
- Empathy, anticipation, and proactive problem-solving abilities.
- Meticulous attention to detail, organization, and precision.
- Flexibility, adaptability, and teamwork spirit.
- Desire to advance in the hospitality and restaurant industry.
Significant experience in sommellerie within a similar high-end establishment is required.
Formal training in sommellerie (e.g., Bac Pro, BP Sommellerie, WSET Level 4).
