Assistant Microbiology Engineer

- Manage projects related to the use of microorganisms in oenology, including phasing, implementation, and monitoring of trials, as well as analysis and interpretation.
- Select and characterize yeasts and lactic acid bacteria.
- Correct raw materials through processes such as acidification and desugaring.
- Liaise with stakeholders from Moët Hennessy Maisons.
- Finalize yeast selection for upcoming campaigns, determining optimal conditions for biomass production and fermentation trials.
- Collaborate with external partners to analyze and conduct strain trials between harvests and in preparation for the 2025 harvest.
- Facilitate a community focused on the application of microorganisms in oenology.
- Establish and document a share-point dedicated to microbiology in oenology.
- Contribute to the drafting of the Research Tax Credit (CIR) documentation.
- Bachelor's or Master's degree (Bac +4/5) in oenology, microbiology, or a related field.
- Professional proficiency in English.
- Ability to work effectively in a team environment.
- Strong interpersonal skills and capacity for integration.
- Knowledge of wine microorganisms, particularly yeasts and lactic acid bacteria, and their metabolism.
- Technical and analytical skills for developing methodologies to screen strains of interest.
- Strong analytical and synthesis capabilities.
- Familiarity with classical microbiology tools and molecular biology techniques.
- Understanding of oenology, especially fermentation phases and associated techniques.
