- Conduct a comprehensive literature review on dissolved gases in wines.
- Characterize the evolution of dissolved CO2 levels during champagne production from fermentation to bottling.
- Evaluate inter-vintage differences and reserve wines.
- Characterize variability between production sites (intra-vintage).
- Assess the impact of dissolved gas levels on non-conformities during bottling (foam, filling, etc.).
- Propose improvement solutions and design a dashboard to anticipate at-risk cuvées.
- Participate in sensory analysis activities, supporting the annual training of the expert oenology panel.
- Develop a specification and conduct a bibliographic search for training execution.
- Organize training sessions and evaluate tasters' sensory performance using descriptive and discriminative methods.
- Draft session reports and update the panel performance dashboard.
- Pursuing a Master's degree or equivalent in Food Science, Engineering, or DNO.
- Strong interest in the wines and spirits sector.
- Good understanding of wine chemistry and biochemistry.
- Comfortable with fieldwork, statistical sessions, and report writing.
- Proficiency in Excel and PowerPoint.
- Experience with JMP and Fizz (Biosystèmes) is advantageous.
- Exceptional attention to detail and critical thinking skills.
No prior experience required, suitable for beginners.
Pursuing a Master's degree or equivalent in Food Science, Engineering, or DNO.
