Galeries Lafayette Pastry Chef

- Create and prepare pastries in accordance with technical specifications and company-defined processes.
- Provide expertise to the head chef and production staff in the creation of desserts, mastering the fundamentals of pastry such as basic creams and doughs, and understanding large-scale production methods.
- Perform the plating and presentation of desserts.
- Adhere to hygiene and safety regulations concerning equipment, foodstuffs, and work attire.
- Assist in the development of new menus by collaborating directly with the head chef.
- Manage stock and supply for the pastry section, including storage of ingredients, receipt and verification of deliveries, inventory management, and forecasting of necessary products.
- Communicate supply and equipment needs to management.
- Ensure the quality of desserts offered and the work done in preparation of dishes.
- Contribute creativity to evolve culinary recipes.
- First experience in pastry (boutique, restaurant, or mass production).
- Completion of a CAP in pastry, a professional baccalaureate in catering, a technological baccalaureate in hospitality, or a professional pastry certificate.
- Action-oriented with a readiness for new challenges and opportunities.
- Strong teamwork skills, naturally encouraging colleague participation in projects.
- Adaptability in approach and behavior to suit various situations.
A minimum of initial experience in a pastry setting, whether in boutique, restaurant, or large-scale production environments.
CAP in Pastry or equivalent professional qualification.
Fixed salary over 12 months, with a variable component up to €237 gross per month, a 13th-month salary, holiday bonus, and profit-sharing incentives.
