- Serve as a key support to the Head Pastry Chef, ensuring the excellence of the pastry department.
- Oversee the creation of exceptional desserts, emphasizing seasonal ingredients and maintaining the Maison's pastry identity.
- Ensure meticulous mise en place, preparation, and plating, guaranteeing consistency and elegance in every service.
- Supervise and train pastry team members, ensuring adherence to instructions and fostering team cohesion.
- Exhibit creativity, precision, and a commitment to excellence in the role of Sous Chef Pastry.
- Culinary training from CAP to Bac+2 level.
- Confirmed experience in pastry within Michelin-starred restaurants (3 to 5 years).
- At least 2 years of experience as a Sous Chef.
- Mastery of mise en place, pastry techniques, cooking, and plating.
- Ability to autonomously manage a station and oversee production.
- Experience in leading, mentoring, and training pastry teams.
- Proficient in stock management, raw material control, and anticipating needs.
- Thorough knowledge and strict application of HACCP standards.
- Creative participation in dessert development and close collaboration with the Head Pastry Chef.
Minimum 3 years of experience in a similar role within Michelin-starred establishments.
Culinary training from CAP to Bac+2 level.
Accommodation or a housing allowance of €450 gross, meals during working hours, provided and laundered uniforms, transportation costs covered (€100 each way), and potential bicycle loan under certain conditions.
