- Maintain excellent relationships with the F&B department and suppliers.
- Act as an ambassador for the Maison, upholding the outlet's values and image.
- Ensure effective communication both upwards and downwards within the hierarchy.
- Participate in F&B meetings as required.
- Achieve outlet objectives in line with forecasts and budget.
- Monitor consumption and needs of the pastry area to remain proactive.
- Support the Executive Sous Chef in preparing monthly activity reports.
- Establish staff incentives based on objectives.
- Update objectives according to activity.
- Ensure compliance with SOPs.
- Train, inform, and supervise associates under their responsibility.
- Delegate responsibilities within the pastry area and provide clear instructions to Pastry Chef de Partie.
- Set an example and foster teamwork among colleagues and the team.
- Responsible for team behavior and hygiene.
- Oversee the execution of every task.
- Create a motivating and cohesive atmosphere.
- Ensure a positive working relationship.
- Support the Executive Pastry Chef in recruitment and selection of associates based on needs, activity, and budget.
- Serve as a coach and advisor.
- Verify and validate attendance sheets.
- Ensure schedules are adhered to.
- Responsible for monitoring and enforcing hygiene and safety standards in the kitchen.
- Control the quality of raw materials and products used.
- Ensure culinary quality standards are met.
- Responsible for accurate application of technical sheets and SOPs.
- Oversee the quality of each dish.
- Ensure the team follows specification sheets.
- Participate in production and quality control.
- Ensure safety and cleanliness of the kitchen area.
- Collaborate closely with Executive Pastry Chef and Sous Chef.
- Ensure information is communicated effectively up and down the hierarchy.
- Participate in weekly departmental meetings and daily briefings.
- Oversee the management and maintenance of equipment.
- Manage inventory control.
- Minimum 3 years of experience in a similar role.
- Strong leadership and team management skills.
- Excellent communication and interpersonal abilities.
- Proficiency in culinary techniques and pastry arts.
- Attention to detail and quality control.
- Ability to work in a fast-paced environment.
