- Manage daily operations within the sommellerie service.
- Advise guests on wine and spirit selections to enhance their dining experience.
- Ensure optimal guest satisfaction throughout the service.
- Handle billing and payment processes with the approval of the supervisor.
- Set up operational procedures and manage wine cellar inventory in collaboration with the Purchasing department.
- Welcome guests and provide exceptional service to maximize revenue.
- Assist with order taking, transmission, and service of beverages according to hotel procedures.
- Participate in clearing and resetting tables.
- Promote hotel and Cheval Blanc services and products.
- Perform cleaning tasks according to hotel standards.
- Manage linen setup, renewal, and supply.
- Report any unusual situations regarding safety or customer/colleague risks to management.
- Formal training in sommellerie such as Bac Pro Service et Commercialisation, Bac STHR, BP Sommellerie, MC Sommellerie, or WSET Level 4.
- Knowledge of HACCP hygiene standards.
- Understanding of beverage service legislation.
- Familiarity with luxury hotel or fine dining environments.
- Strong knowledge of gastronomy, sommellerie, and oenology.
- Excellent interpersonal and representational skills.
- Strong customer service orientation, courtesy, and tact.
- Empathy and ability to anticipate needs and offer solutions.
- Precision, organization, and attention to detail.
- Flexibility and adaptability.
- Team spirit and eagerness to advance in hospitality and restaurant sectors.
- Proven sales and communication skills.
- Proficiency in Microsoft Office and Micros.
- Fluent in English; additional languages such as Italian, Japanese, or Russian are advantageous.
Significant experience in sommellerie within a similar high-standard establishment is required.
Formal training in sommellerie is required.
