- Manage and execute all culinary operations for the assigned station, ensuring consistent quality and presentation throughout service.
- Prepare mise en place and lead production from preparation to final plating according to recipes and technical fiches.
- Ensure flawless service flow in coordination with the brigade and pass, maintaining timing and portion control during peak service.
- Mentor, train and supervise junior cooks and stagiaires, transmitting standards of technique, efficiency and mise en place.
- Uphold and monitor strict hygiene and food-safety standards (HACCP), performing regular checks and documentation.
- Control ingredient quality, minimise waste and participate in resource planning and stock rotation to optimise costs.
- Professional culinary qualification (BEP / CAP / Bac Pro Cuisine) or equivalent.
- Demonstrable experience in luxury hotel kitchens or Michelin-starred restaurants.
- Minimum three years of practical kitchen experience, including prior roles in a similar establishment.
- Proven knowledge and application of HACCP and other hygiene standards.
- Strong leadership, adaptability, availability for flexible schedules and collaborative team spirit.
