- Oversee the preparation of menu components as per the Chef de Cuisine's technical sheets.
- Organize and manage the kitchen staff under one's charge, ensuring adherence to hygiene standards.
- Monitor the receipt of goods, ensuring quality and compliance with HACCP protocols.
- Ensure proper storage and preservation of food items according to hotel procedures.
- Maintain the freshness and quality of products.
- Efficiently manage perishable goods in line with hotel procedures.
- Prepare and oversee menu components, ensuring adherence to the Chef's instructions and hotel procedures.
- Strive to deliver high-quality dishes with aesthetic appeal, optimizing cost efficiency.
- Ensure cleanliness, safety, and hygiene in the designated area, adhering to HACCP standards.
- Maintain and care for all equipment in the designated area, following HACCP standards.
- Participate in daily stock management, including FIFO, inventory, and ordering.
- Coordinate team efforts to ensure seamless service quality.
- Welcome and train new staff members.
- Supervise Commis and Demi-Chefs de Partie, providing operational support.
- Report any abnormal situations concerning safety or potential accidents to management.
- BEP/CAP in Cuisine or BAC PRO Cuisine
- Mastery of HACCP hygiene standards
- Familiarity with luxury hospitality or Michelin-starred dining
