1. Manage daily operations within the sommelier service.
2. Advise on and facilitate the sale of wines and spirits, ensuring optimal guest satisfaction throughout service.
3. Handle billing and payment processes in coordination with the superior.
4. Oversee operational setup, cellar management, stock tracking, and inventory in collaboration with the Purchasing/Economat department.
5. Welcome guests and provide expert advice to enhance their dining experience and maximize revenue.
6. Participate in order taking, transmission, and service of beverages and potentially dishes, adhering to hotel procedures.
7. Assist in clearing and resetting tables.
8. Present bills and process payments as per hotel protocols.
9. Promote various services and products available within the hotel and Cheval Blanc properties.
10. Perform cleaning tasks according to hotel procedures.
11. Manage linen setup, renewal, and supply.
12. Report any unusual situations regarding guest safety or potential accidents to the management.

1. Formal education in sommellerie such as Bac Pro Service et Commercialisation, Bac STHR, BP Sommellerie, MC Sommellerie, or WSET Level 4.
2. Knowledge of HACCP hygiene standards.
3. Familiarity with beverage service legislation.
4. Experience in luxury hospitality or starred restaurants.

Formal education in sommellerie such as Bac Pro Service et Commercialisation, Bac STHR, BP Sommellerie, MC Sommellerie, or WSET Level 4.
