Role & Responsibilities

  • Lead day-to-day kitchen operations, ensuring consistency of quality, presentation and timing across all outlets and services.
  • Supervise, coach and schedule culinary teams; recruit and develop cooks and demi-chefs to maintain high performance standards.
  • Collaborate with the Executive Chef on menu development, seasonal offerings and special event menus while preserving brand culinary identity.
  • Oversee cost control, portioning, waste reduction and supplier relations to meet budgetary targets and food cost KPIs.
  • Enforce strict food safety and hygiene standards (HACCP) and ensure all regulatory inspections and internal audits are met.
  • Coordinate banquet and à la carte service flow, liaising with front-of-house to deliver seamless guest experiences.
  • Manage inventory, stock rotation and ordering processes to optimise kitchen efficiency and minimise spoilage.

Qualifications

  • Professional culinary diploma or equivalent certification from a recognised culinary institute.
  • Advanced knowledge of classical and contemporary culinary techniques applicable to luxury and fine-dining environments.
  • Food safety certification (HACCP) and demonstrable experience implementing kitchen hygiene systems.
