Role & Responsibilities
- Execute daily production on assigned hot or cold station in accordance with menu specifications, portion control and plating standards.
- Prepare mise en place, basic sauces, garnishes and components to ensure smooth service flow during peak periods.
- Maintain consistent food quality, presentation and timing to meet the maison’s gastronomic standards.
- Follow recipes and production sheets precisely while contributing constructive suggestions for menu refinement and seasonal adaptation.
- Operate and maintain kitchen equipment safely and keep assigned areas clean, organised and stocked throughout service.
- Comply with HACCP, food safety, allergy protocols and local regulatory requirements; perform inventory and assist with stock rotation.
Qualifications
- Professional culinary qualification (Culinary Arts diploma, CAP, vocational certificate) or equivalent apprenticeship experience.
- Valid food safety / HACCP certification (or willingness to obtain upon hire).
- Demonstrable knife skills, knowledge of classic cooking techniques and ability to execute consistent portions under pressure.
- Capacity to work flexible hours including evenings, weekends and public holidays as required by gastronomic service rhythms.
- Strong teamwork ethic and experience working within a hierarchical brigade kitchen.
