Role & Responsibilities
- Produce and coordinate preparation of food items for daily menus and special events in accordance with menu counts and production sheets
- Control daily and weekly food inventories while monitoring costs and profitability through proper use of production and order documentation
- Maintain awareness of inventory cost structures and communicate production needs to head cook and supervisory staff
- Coordinate production of menu items using established build-to sheets to minimize waste and optimize resource utilization
- Verify special orders and maintain accurate communication with front-of-house associates regarding order flow and timing
- Maintain clean, organized work areas and equipment in compliance with all health and sanitation standards and local health department regulations
- Close and sanitize work areas at end of shift according to established health codes and prepare items required for following day's production
- Monitor equipment functionality daily and report any malfunctions to designated supervisors
- Communicate supply needs and procurement requirements to supervisory staff
- Maintain adherence to all health, sanitation, and food safety protocols established by Neiman Marcus and third-party auditors
Qualifications
- High school diploma or GED
- Minimum three years of relevant culinary or restaurant cooking experience
- Demonstrated ability to manage inventory control and production planning
- Knowledge of health and sanitation standards in commercial food preparation
- Ability to lift and carry up to 35 pounds regularly
- Ability to stand, bend, and climb stairs for extended periods
