Role & Responsibilities
- Lead day-to-day kitchen operations, ensuring consistent execution of the menu and exceptional culinary standards.
- Develop and evolve menus aligned with seasonal sourcing, brand positioning and guest expectations.
- Manage staffing: recruit, train, mentor and schedule kitchen brigade to maintain productivity and high morale.
- Control food costs and labour through accurate forecasting, portion control, supplier negotiation and inventory management.
- Enforce food safety, hygiene and allergen procedures to comply with HACCP and local regulatory requirements.
- Collaborate with front-of-house leadership to ensure seamless service, menu knowledge and superior guest experiences.
- Drive continuous improvement initiatives: recipe standardisation, waste reduction and kitchen efficiency.
Qualifications
- Proven culinary leadership with prior experience as a head chef, chef de cuisine or senior sous chef in fine-dining or luxury hotel restaurants.
- Demonstrable track record of menu development, team leadership and delivering consistent high-quality service.
- Formal culinary training or equivalent professional apprenticeship.
- Certification in food safety / HACCP (or ability to obtain local equivalent).
- Strong commercial acumen with experience managing food cost, budgets and supplier relationships.
