Role & Responsibilities

  • Operate and maintain high-capacity industrial dishwashing machines and associated equipment, ensuring all serviceware, glassware and cookware meet the venue’s presentation and hygiene standards.
  • Hand-wash and gently handle delicate or specialty pieces (china, crystal, silver) following established procedures.
  • Maintain an immaculate dishroom: sort, stack and store cleaned items; manage drying racks; and ensure timely replenishment of service stations and kitchen workstations.
  • Adhere to HACCP and local food-safety regulations, including correct chemical usage, temperature control and cross-contamination prevention.
  • Collect and dispose of kitchen waste and recyclables, perform basic cleaning duties (floors, drains, grease traps) and support daily deep-clean schedules.
  • Report equipment faults, breakages and supply shortages to the sous-chef or stewarding supervisor; assist with simple preventative maintenance and inventory of cleaning chemicals.
  • Support the wider kitchen brigade during peak periods — unpacking deliveries, basic mise-en-place tasks and light portering as needed.

Qualifications
