Culinary Commis training programme with Ruinart Champagne House in Épernay. 14-week intensive course plus 8-month employment contract.
Role & Responsibilities
- Execute culinary preparations according to established directives and standardized recipes
- Prepare and portion ingredients according to recipes and culinary specifications
- Execute simple dishes and participate in plating and food presentation
- Prepare staff meals in compliance with quality and safety standards
- Monitor product and ingredient quality throughout storage and preparation stages
- Maintain correct temperature protocols across all kitchen equipment including fryers and refrigeration units
- Manage partial inventory of food products including receiving and storing dry goods and perishables
- Monitor expiration dates and rotate stock appropriately
- Assist with order entry into designated systems and coordinate inter-site deliveries as required
- Ensure kitchen hygiene standards and equipment cleanliness meet luxury hospitality requirements
- Apply all regulatory requirements and operational protocols specific to the position
Qualifications
- Holds a diploma in hospitality and food production (BTS level or equivalent) or possesses significant sector experience
- Demonstrates passion for the luxury universe, hospitality culture, and Champagne heritage
- Shows genuine commitment to evolving within an internationally recognized prestige house
Skills
Experience
Beginner to intermediate level. Recent graduates or career-switchers with formal hospitality education, or professionals with meaningful prior sector experience.
Education
Holds a diploma in hospitality and restaurant management (BTS BAC+2 equivalent) or demonstrates equivalent sector experience through professional practice.
