Marchesi 1824 seeks an experienced Maître de Salle in Milan to lead dining room operations and deliver luxury hospitality excellence for the Prada Group.

Role & Responsibilities

  • Coordinate and supervise dining room operations during all service phases, ensuring compliance with company procedures, HACCP regulations, and quality standards
  • Oversee restaurant opening and closing procedures, monitoring operational workflows and efficiency
  • Deliver exceptional guest experiences throughout all service phases in alignment with Prada Group standards
  • Monitor service quality continuously, intervening promptly to resolve issues and maintain high customer satisfaction levels
  • Address guest complaints and operational challenges with professionalism, diplomacy, and discretion to protect brand reputation
  • Lead, motivate, and develop the dining room team through exemplary leadership, fostering a culture of excellence, collaboration, and accountability
  • Plan and implement ongoing training programs on service standards, food and beverage offerings, and operational procedures
  • Collaborate daily with the executive chef, sommelier, and bar manager to ensure smooth service coordination and optimal timing
  • Communicate Prada Group values, heritage, and identity to guests through authentic storytelling aligned with brand positioning
  • Maintain comprehensive knowledge of the food and beverage portfolio, product characteristics, costs, and margins to guide guest selections and drive revenue
  • Monitor daily commercial performance metrics including sales, average check, product mix, and upselling opportunities
  • Guide the team in promoting high-margin offerings and contribute to revenue and profitability targets
  • Analyze results against budget and forecast, proposing and implementing corrective actions as needed
  • Optimize processes, team organization, inventory management, procurement, and operational areas while controlling costs and upholding company standards
  • Support the Director in defining and implementing the Service Ceremony, assuming full operational responsibility for the restaurant in the Director's absence

Qualifications

  • Proven experience in dining room coordination within fine dining, luxury hospitality, or high-level restaurant environments
  • Solid command of dining room operational procedures, service standards, and HACCP regulations
  • In-depth knowledge of food and beverage operations, sales techniques, and key restaurant economic indicators
  • Demonstrated ability to analyze operational and commercial KPIs with attention to costs, margins, profitability, and sales performance
  • Experience in team management, training, and professional development
  • Excellent organizational, interpersonal, and problem-solving capabilities
  • Strong guest-centric orientation with focus on service quality and results achievement
  • Genuine interest in the luxury sector and ability to embody Prada Group values and identity
  • Fluent in Italian and English
