Role & Responsibilities

  • Lead daily kitchen operations, ensuring consistent food quality, plating standards and timely delivery of all menu items.
  • Manage inventory, track daily food costs and maintain documentation to minimize waste and meet target food-cost percentages.
  • Develop and execute daily specials, soups and menu items; keep recipe book and menus current.
  • Ensure compliance with corporate, local and federal Health & Sanitation standards and third‑party sanitation auditors; drive seasonal shop report and sanitation evaluation targets (90%+).
  • Train, coach and discipline kitchen and restaurant associates; partner with Human Resources on performance, payroll and benefits issues.
  • Oversee catering and special-event execution; collaborate with front-of-house staff to ensure seamless service.
  • Maintain POS and other restaurant paperwork; analyze reports to monitor restaurant performance against the bottom line and month-end forecasts.
  • Execute purchasing and supplier management in accordance with Corporate Purchasing Contracts; sustain professional vendor relationships.
  • Coordinate scheduling, communicate daily with restaurant management and regional leadership to align on events, P&L and staffing needs.

Qualifications

  • Bachelor's degree preferred; culinary school diploma or equivalent professional experience accepted.
  • Proven track record of achieving measurable results in a high-volume, upscale foodservice environment.
  • History of leading, motivating and coaching culinary and service teams.
  • Basic financial acumen, including familiarity with food-cost monitoring, inventory control and menu pricing.
  • Working knowledge of order of service and formal table mise-en-place (china, glassware, flatware) as dictated by service guides.
  • Basic proficiency with MS Office Product Suite; advanced proficiency preferred.
  • Ability to stand for long periods, bend, climb stairs and lift/carry up to 35 pounds.
  • Flexible availability, including evenings, weekends and holidays.
