Moët & Chandon seeks Experimental Cellar Operator in Épernay, France for 2-week harvest contract at research centre.
Role & Responsibilities
- Assist the press operator during key pressing stages, including must transfer, sampling, and sulfiting/enzyming according to specifications
- Manually load the 500 kg pilot press while adhering to safety protocols
- Collect trial data including refractive degree, fraction volumes, and juice temperature for press records
- Monitor juice flow (cuvée and taille fractions) and transfer must to settling tanks
- Participate in press discharge and cleaning operations
- Empty and clean sampling tanks and settling vats
- Alert the press operator when cleaning is complete to initiate the next cycle
- Record lot numbers, dates, times, modalities, and operations performed on tank labels
- Execute planned treatments: enzyming, sulfiting, leavening, bentoniting, and chaptalization of cuvées
- Prepare starter cultures and assist with wine transfers
- Perform decanting and racking according to schedule
- Remove lees and assist with fermentation monitoring
- Assist sampling technicians in collecting analysis samples and monitoring fermentation compliance with the sampling plan
- Apply treatments as instructed by supervision
- Report activities in real-time to the team leader
- Inquire with team leader about daily work assignments
- Report equipment malfunctions to competent personnel
Qualifications
- Baccalaureate +2 in viticulture and oenology or equivalent
- One year of cellar operations experience
- CACES 3 certification (preferred)
- Meticulousness and organizational skills
- Strong interpersonal abilities
- Capacity to adapt quickly to changing conditions
- Curiosity and attention to detail
- Rapid learning ability

Experience
Minimum one year of hands-on cellar operations experience. Rapid learning ability and familiarity with winemaking processes are essential.
Education
Baccalaureate +2 in viticulture and oenology or equivalent qualification in winemaking or wine science.
