Marchesi 1824 in Milano seeks a Quality Manager to oversee food safety, compliance, and quality processes in this Prada Group food and beverage venture.
Role & Responsibilities
- Manage and maintain the quality and food safety management system, ensuring proper HACCP system updates and procedure compliance; coordinate and monitor internal and external audits, inspections, and conformity verifications
- Supervise non-conformity and complaint management, conducting root cause analysis, follow-up, and timely closure with corrective and preventive actions
- Oversee traceability processes, allergen management, shelf-life validation, and analytical plans in alignment with company and regulatory standards
- Qualify, evaluate, and monitor suppliers regarding quality and food safety performance
- Supervise quality and food safety standards across the retail network through periodic audits and monitoring activities; analyse non-conformities, define corrective actions, and support retail locations in proper procedure implementation
- Ensure compliance of products destined for international markets with applicable regulatory requirements, overseeing labelling, ingredients, allergens, nutritional declarations, and technical documentation
- Coordinate information collection and verification for product compliance management; maintain relationships with consultants, laboratories, and competent authorities to support regulatory adherence
- Verify and validate technical sheets, recipes, product specifications, packaging, and labels to ensure information consistency and regulatory compliance
- Support R&D, Procurement, and Marketing in new product development phases, evaluating quality, food safety, and compliance requirements while managing product and process modifications
- Construct, update, and monitor food cost calculations for products and preparations; analyse yields, waste, consumption, and standard costs to identify cost optimization opportunities
- Monitor key production and quality KPIs; analyse inefficiencies and identify improvement opportunities in collaboration with the Plant Manager
- Prepare and monitor reports and KPIs related to quality, food safety, non-conformities, complaints, audits, supplier performance, and production indicators; communicate trends and critical findings to relevant departments
- Contribute to the dissemination of quality and food safety culture through procedure development, staff training, and continuous improvement initiatives
Qualifications
- Degree in Food Science and Technology, Chemistry, Biology, Biotechnology, or related scientific disciplines
- Minimum 5 years of experience in Quality/Food Safety roles, preferably in food sector companies or structured production environments
- Solid knowledge of HACCP, Food Safety, quality management systems, audits, non-conformity management, CAPA, traceability, and allergen management
- Knowledge of food safety regulations, labelling, product compliance, and regulatory requirements with international market reference
Skills
Experience
Minimum 5 years of professional experience in Quality and Food Safety roles, preferably in established food production companies or structured manufacturing environments with direct responsibility for quality management systems, regulatory compliance, and operational excellence.
Education
Degree in Food Science and Technology, Chemistry, Biology, Biotechnology, or related scientific disciplines.
