The Head Waiter ensures excellent guest service at Ristorante Torre, fostering a refined and welcoming atmosphere while representing the values of Marchesi 1824 and Fondazione Prada. The role oversees dining-room service, guest relations, menu guidance, payments and opening and closing procedures. Compensation is €28,000–€34,000 under the CCNL Turismo e Pubblici Esercizi.

Role & Responsibilities

• Welcome and accompany guests throughout every stage of service, delivering a thoughtful, personalized experience in line with company standards.
• Represent the history, identity and values of Ristorante Torre, as well as Fondazione Prada’s artistic and cultural context, through authentic and engaging storytelling.
• Manage dining-room operations, ensuring efficiency and coordination with the kitchen.
• Present the menu and culinary offering knowledgeably, take orders and provide tailored recommendations in line with guests’ preferences and service timings.
• Monitor guest satisfaction, anticipate needs, and handle requests or issues promptly and professionally.
• Process payments accurately and in accordance with company procedures.
• Ensure compliance with food hygiene and workplace safety regulations.
• Ensure opening and closing activities are carried out correctly, following operating procedures and standards for order, cleanliness and preparation of the spaces.

Qualifications

• Established experience in comparable roles at fine-dining restaurants or other high-end dining establishments.
• Knowledge of French, Italian and/or international service techniques.
• Interest in and passion for gastronomy, with an appreciation of product quality and the culinary experience.
• Excellent communication and interpersonal skills, with a strong aptitude for welcoming guests and a customer-oriented approach.
• Exceptional attention to detail and the ability to deliver attentive, personalized service to high quality standards.
• Organizational skills and the ability to manage priorities in dynamic, fast-paced environments.
• Flexibility, team spirit and the ability to collaborate effectively with different operational functions.
• Professionalism, courtesy and the ability to handle complex situations with composure and discretion.
• Good command of English; additional languages are an advantage.
