Marchesi 1824 — Milan seeks a Chef de Rang for Ristorante Torre to deliver exceptional fine‑dining front‑of‑house service.
Role & Responsibilities
- Oversee opening and closing procedures for the restaurant, ensuring full compliance with operational checklists and HACCP hygiene standards.
- Manage day‑to‑day dining room operations and coordinate service flow between kitchen and front of house to guarantee a seamless guest experience.
- Accompany and guide guests through the entire dining experience, providing attentive, professional and detail‑driven service at every stage.
- Take and manage orders accurately, proactively advise guests on menu choices and pairings to enhance the gastronomic experience while anticipating individual preferences.
- Apply the restaurant’s ceremony of service in alignment with instructions from the Floor Manager and Restaurant Director, maintaining consistency with brand standards.
- Continuously monitor guest satisfaction during service, provide timely assistance and resolve issues promptly to preserve the restaurant’s positioning and reputation.
- Maintain high standards of cleanliness, order and organisation in service, storage and waste areas and ensure operational spaces are prepared and maintained to brand standards.

- Ability to work collaboratively within a team and coordinate effectively with kitchen staff.
- Flexibility in working hours and shifts typical of luxury restaurant operations.
- Acute attention to detail and service etiquette appropriate to fine dining.

Experience
Proven hands‑on experience in a fine‑dining or luxury hospitality environment, with demonstrated competence in front‑of‑house service and in coordinating service flow between kitchen and dining room.
Education
Secondary school diploma or equivalent; vocational training or certification in hospitality/food & beverage is desirable.
