Role & Responsibilities
- Manage the operational activities of an assigned kitchen station: prepare mise en place, follow recipes and grammages, and ensure consistent portioning and plating.
- Coordinate and supervise demi-chefs and commis de partie to ensure efficiency, organisation and adherence to brigade procedures during service.
- Maintain and monitor ingredient quality, reporting anomalies or shortages to the Sous Chef / Executive Chef and ensuring alignment with the restaurant’s standards.
- Control storage, stock rotation and contribute to inventory activities to minimise waste and support timely procurement.
- Execute service according to timing and operational priorities, guaranteeing consistency in taste, presentation and portion sizes.
- Ensure strict compliance with HACCP and food-safety procedures and the correct use of professional kitchen equipment.
- Participate in operational briefings and training sessions; support the professional development of junior kitchen staff and help maintain a collaborative, high-performance brigade.
Qualifications
- Solid knowledge of culinary techniques and professional kitchen operations.
- Proven ability to manage a station and to supervise/mentor demi and commis staff.
- Strong organisational skills with the capacity to prioritise under pressure.
- High attention to detail, discipline and respect for brigade hierarchy.
- Commitment to quality, consistency and the brand’s culinary standards.
- Familiarity with HACCP and food-safety regulations.
Skills
Experience
Proven experience in a professional kitchen, preferably in upscale or fine-dining environments; prior experience as a Chef de Partie, station cook or senior commis with responsibility for supervising junior staff is expected.
Education
Culinary school diploma or equivalent professional training; substantial on-the-job experience may be accepted in lieu of formal qualifications.
