Le Bon Marché Quality, Process and Environment Manager
La Grande Epicerie de Paris (Paris) seeks a Quality, Process and Environment Manager (fixed-term) to oversee HACCP, microbiology and environmental KPIs.

Role & Responsibilities
- Develop, implement and maintain HACCP-based procedures and ensure regulatory vigilance for process quality.
- Maintain and update sanitary accreditations for in-house laboratories and the PMS (Plan de Maîtrise Sanitaire) for all activities.
- Draft and refresh Good Practice Guides for each department and product category.
- Ensure compliance with internal procedures through management of external audits and execution of internal audits.
- Manage the microbiological control plan: sampling programme, result interpretation, reporting, corrective action plans and alerts; oversee shelf-life studies.
- Define corrective actions after non-conformities and support department managers through implementation.
- Lead biannual quality reviews by sector and animate cross-functional quality meetings.
- Supervise and control external service providers (analyses, cleaning, pest control, cleaning products, waste management) and steer related budgets.
- Monitor environmental KPIs related to waste and anti-food-waste initiatives and manage partnerships for donation of unsold foodstuffs.
- Prepare regulatory labeling statements for products manufactured by in-house laboratories and execute product withdrawal and recall procedures when required.
Qualifications
- Master's degree (Bac+5) in food safety, microbiology or an equivalent university qualification.
- Practical field experience obtained through internships or alternance; experience in distribution, laboratory, catering or food production preferred.
- Strong operational orientation with a demonstrated taste for on-site, hands-on work.
- Excellent interpersonal skills, diplomacy and the ability to enforce quality requirements while maintaining stakeholder relationships.
- Exemplary personal standards: rigor, autonomy, dynamism and responsiveness.

Entry-level. Practical, on-site experience is expected through internships or alternance; prior exposure to distribution, laboratory, traiteur or restaurant operations is highly valued.
