La Grande Epicerie de Paris (Paris) is hiring a Butcher (CDI, full-time) to prepare carcasses, advise clients and uphold hygiene and merchandising standards.
Role & Responsibilities
- Butcher whole carcasses: break down, portion, trim and prepare meat for retail sale according to quality and yield standards.
- Deliver high-quality, consultative customer service: greet clients, assess needs, advise on cuts and preparation, and propose complementary products to drive sales and loyalty.
- Prepare and present the counter: open/close the section, arrange displays, replenish stock, implement pricing and signage, and ensure attractive merchandising.
- Manage product quality and inventory: monitor shelf-life (DLC), perform stock rotation, record inventory, and execute deliveries and storage procedures.
- Maintain hygiene and safety: perform daily cleaning, respect food-safety rules (HACCP), and comply with regulatory requirements for meat handling.
Qualifications
- Vocational qualification or diploma in butchery/trade certificate.
- Practical skills in carcass fabrication, trimming and portioning; familiarity with prime cuts and product yield optimisation.
- Strong customer-facing sales aptitude with ability to advise and upsell to a discerning clientele.
- Rigorous approach to hygiene, temperature control and food-safety procedures (HACCP).
- Good organisational skills, autonomy, physical stamina and excellent interpersonal qualities.
- Ability to communicate in English.

Entry-level (débutant) acceptable; practical experience in a retail butcher role or similar environment is advantageous and will be valued.
Education
Vocational qualification or formal training in butchery (CAP/BEP or equivalent).
