Role & Responsibilities
- Prepare and present daily desserts and viennoiseries for breakfast, lunch and dinner services according to guest typology.
- Support development of the Château de Bagnolet's gastronomic offering by contributing creative ideas and recipe execution.
- Produce staff desserts and manage mise en place for service periods.
- Participate in ordering and supplier coordination, prioritising short‑supply/regional sources where possible.
- Maintain cleanliness and organisation of pastry production areas, equipment and tools.
- Ensure correct use of pastry equipment and strict adherence to food‑safety and hygiene standards.
- Monitor culinary trends and conduct gastronomic research to inform menu development.
- Act as deputy to the head pastry chef and cover their responsibilities during absences.
Qualifications
- CAP Pâtisserie or equivalent vocational pastry diploma (required).
- Comfortable working continuous service or split shifts.
- Own transportation or ability to commute by car.
