Hennessy in Cognac seeks an Apprentice Pastry Chef (alternance) for an on-site apprenticeship at Château de Bagnolet.
Role & Responsibilities
- Contribute to the design and production of the weekly dessert menu according to guest typologies.
- Prepare and plate desserts and viennoiseries for daily lunch and dinner services and breakfasts.
- Produce staff desserts and participate in menu development for the Château’s gastronomic offer.
- Monitor culinary trends and contribute creative ideas to evolve the pastry offering.
- Manage ordering and ensure correct handover of supplier requests, prioritising short/regional supply chains.
- Maintain cleanliness of premises, equipment and tools; ensure correct use of appliances.
- Respect and enforce hygiene and safety rules (sanitary standards) in daily operations.
- Stand in for the head pastry chef during absences.
Qualifications
- CAP Pâtisserie or equivalent vocational pastry qualification (required).
- Driver’s license or personal vehicle (required).
- Ability to work continuous services or split shifts.
- Punctuality and strong professional reliability.
- Curiosity and creativity with a strong interest in gastronomy.
- Team-oriented and comfortable working in a small, polyvalent brigade.
- Willingness to learn in a demanding, high-standard environment and to adapt to varied guest needs.
Skills
Experience
Entry-level apprenticeship: suitable for candidates at the start of their pastry training. Hospitality experience is a plus but not mandatory.
Education
CAP Pâtisserie (or equivalent vocational pastry diploma).
Workplace
The successful candidate will be located in Cognac, Nouvelle-Aquitaine, France, with easy access to Bordeaux.
