Gucci in Florence seeks a Commis de Cuisine for Gucci Osteria — support the Chef de Partie in prep, plating, inventory and quality control.
Role & Responsibilities
- Assist the Chef de Partie with daily mise en place, preparing and accurately measuring ingredients for all menu items.
- Receive and inspect incoming deliveries, verify quantities and quality against orders, and notify supervisors of discrepancies.
- Manage stock levels by taking inventory of supplies and reporting low or depleted items to the supervisor.
- Ensure proper disposal of expired or spoiled product from storage areas, refrigerators and freezers.
- Maintain cleanliness and sanitation of workstations and carry out basic cleaning duties to meet hygiene standards.
- Plate and present dishes according to Chef de Partie instructions and Gucci Osteria presentation standards.
Qualifications
- Minimum two years' professional experience in Italian and/or international cuisine, preferably within gourmet, modern or creative restaurants.
- Proven ability to deliver consistent product quality and execution under service pressure.
- Sound knowledge of Italian food history, traditions and culinary culture.
- Familiarity with food safety and basic kitchen sanitation practices.
- Additional international culinary experience and documented achievements are an advantage.
Skills
Experience
At least 2 years of hands-on kitchen experience in Italian or international cuisine, with preference for candidates who have worked in gourmet or modern creative restaurants; international experience is a plus.
Education
Professional culinary diploma or equivalent vocational qualification preferred; equivalent on-the-job experience accepted.
Workplace
The successful candidate will be located in Florence, Tuscany, Italy.
