Dorchester Collection is hiring a Restaurant Captain for Bonbon Café by Angelo Musa at The Lana in Dubai. The role oversees daily food and beverage operations, guest service, team training, revenue and cost controls, reservations and beverage standards; it is a permanent, full-time position.
Role & Responsibilities
- Oversee the food and beverage outlet’s day-to-day operations to deliver an exceptional guest experience.
- Welcome guests assigned to the restaurant area, present the menu, and recommend and upsell items using strong product knowledge to maximize guest satisfaction.
- Maintain the outlet in immaculate condition and ensure supporting team members follow service standards.
- Train and mentor the waiter team, ensuring they have excellent knowledge and can assist guests effectively.
- Help bring the values of Passion, Personality, Respect, Working Together and Creativity to life and contribute to the hotel’s legacy.
- Monitor revenue targets and ensure they are achieved or exceeded while controlling beverage costs and other expenses within preset budgets.
- Participate in daily pre-service team briefings and stay informed about hotel updates and upcoming service requirements.
- Liaise with other departments to maintain the outlet’s presentation, cleanliness and upkeep, including furniture, equipment, floors, fixtures and fittings.
- Work with hostesses to optimize restaurant reservations, productivity, guest satisfaction and revenue generation.
- Collaborate with the service team to ensure beverage preparation and presentation quality, and control beverage inventory.

- Strong communication skills and a strong customer service ethic.
- Strong knowledge of artisanal coffee preparation and the ability to craft exceptional beverages.

- Comfortable communicating in English; Arabic, Italian, French, Spanish or German is highly desirable.
- Relevant professional certification or hotel school diploma.
- Extensive experience working in luxury hotels and restaurants in the Middle East.
