Dorchester Collection is hiring a Commis Chef for CUT at 45 Park Lane on an on-call or seasonal basis. The role supports the kitchen section with daily food preparation, recipe standards, cost control and special requests; shifts are variable, currently scheduled across 6am–3pm, 7am–4pm, 2pm–11pm and 3pm–12am.
Role & Responsibilities
- Assist the kitchen team in the assigned section to maintain the highest standards of food production.
- Participate in daily food preparation, including portioning products, using surplus food to control costs, and following recipes for portion size, quality and quantity.
- Respond flexibly and creatively to special requests and challenges.
Qualifications
- Understanding of fundamental baking and pastry techniques, including creaming, folding and tempering chocolate.
- Ability to cut, shape and decorate pastries accurately.
- Familiarity with flour types, dairy and chocolate.
- Basic proficiency with piping bags for frosting, chocolate work and garnishing.
- Understanding of how to create visually appealing plated desserts.
- A culinary degree or diploma in pastry arts is beneficial but not required.
- Bakery, hotel or restaurant pastry-section internship or work experience is beneficial but not required.
