The Assistant Restaurant Manager leads daily restaurant operations at Jara by Martín Berasategui at The Lana, Dorchester Collection Dubai, overseeing guest experience, team development, revenue and cost control, reservations, service quality and beverage operations. The role is permanent and full-time.
Role & Responsibilities
- Lead the restaurant’s day-to-day operations to deliver an excellent guest experience.
- Source, hire, mentor and develop team members, implementing a cohesive departmental training and development programme.
- Monitor revenue targets and ensure they are achieved or exceeded while controlling beverage costs, payroll and other expenses within established budgets.
- Hold daily pre-service team briefings to inform staff about hotel updates and the upcoming service.
- Coordinate with other departments to maintain the outlet’s presentation, cleanliness and maintenance standards, including for furniture, equipment, floors, fixtures and fittings.
- Work with the host team to optimize reservations, productivity, guest satisfaction and revenue generation.
- Collaborate with the service team to ensure high-quality beverage preparation and presentation, and maintain beverage inventory control.
- Put the hotel’s values of Passion, Personality, Respect, Working Together and Creativity into practice.

- Comfortable communicating in English; Arabic, Italian, French, Spanish or German is highly desirable.
- Relevant professional certification or hotel school diploma.
- Experience working in luxury hotels and fine-dining restaurants in the Middle East.
