Role & Responsibilities
- Ensure impeccable service according to restaurant procedures and standards
- Oversee team execution to guarantee the highest quality and presentation of dishes
- Contribute creatively to menu development, seasonal offerings, and culinary creations
- Guarantee proper execution of cooking and food preparation in accordance with technical specifications and restaurant procedures
- Monitor product freshness and quality, managing perishable goods inventory according to restaurant protocols
- Supervise culinary production and plate assembly, ensuring aesthetic presentation while optimizing costs
- Maintain hygiene standards and HACCP compliance across all kitchen and dining spaces
- Coordinate merchandise receipt and storage following HACCP protocols and house procedures
- Organize and delegate kitchen and dishwashing tasks under the Chef's direction
- Supervise and lead approximately twenty team members, ensuring smooth operations and staff cohesion
- Develop and transmit culinary techniques and knowledge to enhance team competencies
- Schedule kitchen staff work hours to ensure optimal operational coverage
- Welcome and train new collaborators
- Report any safety concerns or accident risks to senior management
Qualifications
- Minimum 5 years of professional culinary experience in a luxury hospitality establishment
- Proven experience as a Sous-Chef with direct team management responsibilities
- Strong command of French food preparation techniques and luxury service standards
- Thorough knowledge of HACCP protocols and food safety regulations
