Role & Responsibilities
- Assist the Chef de Partie in the preparation and elaboration of dishes, ensuring creative execution and consistent quality across all service periods
- Execute culinary production tasks including reheating, monitoring cooking times, plating, and presentation according to the Maison's standards
- Maintain product freshness and quality whilst ensuring compliance with HACCP protocols during preparation and service
- Coordinate and supervise the work of commis, apprentices, and trainees to guarantee service fluidity and culinary quality
- Oversee facility and equipment maintenance in full compliance with HACCP regulations and hygiene standards
- Receive and process merchandise deliveries according to HACCP protocols and established house procedures
- Manage waste sorting, evacuation, and proper storage of provisions in cold rooms and pantries
- Report any abnormal situations or safety concerns relating to client or colleague well-being to senior management
Qualifications
- Minimum three years' professional experience as a Demi-Chef de Partie in a luxury hospitality establishment
- Demonstrated mastery of culinary techniques and food preparation standards
