Cheval Blanc Paris seeks Wine & Spirits Cellar Manager for luxury hospitality in Paris. Michelin-starred dining, 3+ years required.

Role & Responsibilities

  • Receive, inspect, and catalog incoming wines, champagnes, and associated equipment; verify shipments against purchase orders and documentation
  • Manage cellar storage, organization, and climate control protocols to preserve wine quality and integrity
  • Execute monthly inventory counts, identify and reconcile discrepancies, and ensure accurate stock records in the management system
  • Prepare and coordinate stock transfers and distributions to the hotel's restaurants, bar services, and auxiliary points of sale
  • Participate in procurement activities, including order preparation, vendor communication, and delivery coordination with the Head Sommelier
  • Maintain rigorous adherence to HACCP hygiene protocols, health regulations, and safety standards within the cellar environment
  • Support FIFO (First-In-First-Out) inventory management practices and best practices in stock rotation and warehouse organization
  • Liaise effectively with internal kitchen, restaurant, and service teams as well as external suppliers to ensure seamless operations and uphold brand standards

Qualifications

  • Minimum 3 years of professional experience in a wine cellar or beverage management role, preferably within luxury hospitality or fine dining
  • Demonstrated knowledge of luxury hotel and Michelin-starred restaurant operations
  • Comprehensive understanding of HACCP hygiene standards and food safety regulations
  • Proficiency with inventory management methodologies (FIFO, stock rotation, variance analysis)
  • Excellent presentation skills and professional demeanor
  • Strong interpersonal abilities and collaborative mindset
  • Proven ability to manage stress, resolve conflicts, and thrive in a fast-paced, high-service environment
