Cheval Blanc Paris seeks an experienced Stewarding Manager to oversee luxury hospitality stewarding operations in Paris, France.
Role & Responsibilities
- Supervise all dishwashing, kitchen equipment maintenance, and facility cleaning operations across multiple restaurants and back-of-house areas
- Ensure strict compliance with HACCP protocols, hygiene standards, and legal regulations throughout all stewarding and kitchen facilities
- Manage inventory of tableware and products, organize requisition processes, and maintain accurate stock tracking in coordination with culinary and procurement teams
- Oversee organization and maintenance of back-of-house areas, dishwashing stations, kitchens, offices, storage facilities, and waste management zones
- Lead, train, and evaluate stewarding team members; manage schedules, performance standards, and professional development
- Monitor departmental costs, optimize resource utilization, and participate in budget forecasting and financial management
- Serve as primary liaison with external hygiene services and health inspection authorities
- Communicate operational information across teams and report any safety issues or accident risks to management
Qualifications
- Minimum 5 years' confirmed experience in stewarding, preferably in luxury hospitality or high-end culinary operations
- Proven team management experience with demonstrated leadership capability
- Expert knowledge of HACCP hygiene protocols and applicable legal standards
- Strong competency in inventory management, stock tracking, and requisition procedures
- Operational proficiency in organizing and managing complex service departments
- Cost control awareness and budgetary management experience
