Cheval Blanc recruits a Station Chef for Langosteria in Saint-Barthélemy. Lead fine dining service in a luxury Caribbean palace.

Role & Responsibilities

  • Lead and coordinate the service team across the assigned station with precision and professionalism, ensuring seamless execution of each service period
  • Manage the flow and pacing of service while maintaining impeccable timing and presentation standards
  • Execute classical table service techniques and protocols with mastery, from table setting and mise en place to guest departure
  • Deliver personalized guest consultation on the Langosteria Italian menu and wine pairings with expert knowledge and tact
  • Anticipate and respond proactively to guest preferences, dietary requirements, and special requests
  • Maintain HACCP hygiene standards and food safety compliance throughout all service operations
  • Train and mentor junior service staff, modeling excellence in technique and hospitality
  • Represent the Cheval Blanc brand with elegance and discretion, embodying the maison's commitment to exceptional service
  • Manage table turnover and capacity with efficiency while preserving the luxury dining experience

Qualifications

  • BEP, CAP, or BAC PRO qualification in hospitality or culinary arts
  • Proven experience in Michelin-starred restaurants or luxury hospitality establishments
  • Fluent in French and English, both oral and written
  • Mastery of HACCP food safety standards and protocols
  • Knowledge of classical service techniques and fine dining protocols
  • Strong command of Italian cuisine and wine service
  • Additional language proficiency considered an asset
