Role & Responsibilities

  • Supervise daily bakery operations and ensure faultless execution of all bread and pastry preparations in compliance with Maison standards
  • Lead and mentor the bakery team, overseeing recruitment, training, integration of new staff, and ongoing professional development
  • Develop new bakery recipes and offerings, collaborating with pastry chefs and culinary teams while ensuring feasibility and consistent execution
  • Guarantee rigorous compliance with HACCP protocols, food safety regulations, and all internal quality procedures
  • Maintain impeccable hygiene and safety standards for all equipment, workspaces, and food preparation areas
  • Manage stock levels, coordinate supply orders with the Économat department, and monitor inventory consumption
  • Implement scheduling and staffing plans established by management, ensuring operational flexibility and efficiency
  • Communicate service information, client preferences, and operational updates across all kitchen brigades
  • Report and address any safety concerns, health risks, or incidents involving clients or staff to management
  • Participate actively in the culinary innovation process and contribute to the elevation of bakery offerings

Qualifications

  • BEP or CAP qualification in Baking (Boulangerie)
  • Minimum 2 years of confirmed experience as Chef de Partie or Sous-Chef, preferably in a luxury hotel or Michelin-starred restaurant
  • Mastery of food hygiene and safety regulations, particularly HACCP protocols
  • Deep understanding of demanding environments such as luxury hospitality or fine dining
  • Autonomous in role execution with cross-functional knowledge of multiple kitchen stations
  • Strong organizational and managerial capabilities, including team recruitment, training, supervision, and development
  • Proficiency in general management concepts including revenue analysis, financial ratios, inventory management, and supply chain oversight
