Cheval Blanc Paris seeks an experienced Sommelier Manager for luxury hospitality. Lead wine operations and manage teams. On-site in Paris.

Role & Responsibilities

  • Actively participate in service operations and supervise sommellerie procedures across all dining venues to ensure excellence in guest reception, wine counsel, service delivery, and post-service follow-up
  • Collaborate with the Director of Sommellerie to develop and evolve beverage offerings and wine lists across all food and beverage outlets
  • Manage operational sommellerie functions including inventory, procurement orders, stock-takes, cost control, supplier relationships, and supply chain optimization
  • Lead, mentor, and develop the sommellerie team through recruitment, training, scheduling, performance management, and career development initiatives
  • Drive revenue growth and guest satisfaction metrics while maintaining strict adherence to HACCP protocols and internal operating procedures
  • Oversee information flow, quality assurance, and procedural compliance across the sommellerie function with autonomy, rigor, and proactive problem-solving
  • Manage point-of-sale performance with independent judgment, high standards, and entrepreneurial initiative

Qualifications

  • Diploma in hospitality (CAP, BEP, BAC PRO, or higher qualification)
  • Mastery of HACCP food safety regulations
  • Demonstrated knowledge of luxury hospitality and/or Michelin-starred fine dining environments
  • Strong foundational knowledge of sommellerie and gastronomy
  • Proven experience in a luxury establishment or Michelin-starred restaurant (minimum 3 years)
  • Confirmed capability to manage teams (recruitment, training, organization, development, motivation, performance evaluation)
  • Strong sales and communication aptitudes
  • Proficiency in financial management (cost control, revenue analysis, P&L)
  • Fluency in Microsoft Office, Micros, and Opera PMS software
  • Fluent English (both written and oral) is mandatory; proficiency in a third language is valued
